One extra pocket, twice the price
Roulette prices itself in the open. The European wheel has 37 pockets, numbered 1 to 36 plus a single zero. A straight-up bet on one number wins once in 37 spins on average and pays 35 to 1. A fair payout would be 36 to 1. That missing unit is the house edge, and it works out at 2.7% of every unit staked.
The American wheel adds a double zero, so there are 38 pockets. The payout is unchanged at 35 to 1, which means the same bet now wins once in 38 and the gap between fair and actual payout doubles. The edge becomes 5.26%. Two wheels, the same felt, the same chips, and one costs roughly twice as much per spin as the other. If both are in the lobby, the choice is settled.
On the European wheel the edge is the same 2.7% for every standard bet. Red or black, a corner, a split, a column, a straight-up number, all of them carry it. Spreading chips across the table does not dilute it, because you are simply paying the same 2.7% on a larger total stake. Covering more numbers narrows the range of outcomes, and that is all it does.
One rule genuinely helps, where the site offers it. Under la partage, half your even-money stake is returned when the ball lands in zero; under en prison, it is held for the next spin. Either rule halves the house edge on even-money bets specifically, and it is the only change on this list that alters the price rather than the feel. French roulette tables are where you will find it, so check the rules tab before assuming a single-zero wheel is the cheapest one available.
Why no betting system moves the number
Roulette attracts systems more than any other game, and they all fail for the same structural reason. The edge is charged on each spin separately. A sequence of bets each carrying a 2.7% expected loss adds up to an expected loss, whatever order the stakes are arranged in. There is no way to combine negative expectations into a positive one.
The wheel also has no memory. Each spin is independent, so a run of eight reds tells you nothing about the ninth spin, and a number that has not appeared for two hundred spins is not due. The results board on the screen is decoration. It exists because people want to see it, not because it carries information.
What systems do change is the shape of the outcome. Martingale doubles the stake after each loss, so it produces many small wins and occasionally one loss large enough to remove everything. It also runs into the table maximum, usually before it runs into your balance, at which point the doubling stops and the accumulated loss stands. The Fibonacci and D'Alembert progressions are gentler versions of the same trade. Labouchere is the same trade written differently. Each one raises the probability of a small win by accepting a small probability of a large loss, and the average stays exactly where it was.
The practical version of this is simple. Decide what the session is worth to you, treat that amount as the price of the entertainment, and set it aside before you start. Then pick the bets you enjoy watching. Even-money bets on a single-zero wheel give the longest session for a given budget because the variance is lowest, and straight-up numbers give the shortest. Both cost 2.7%.
What to check in a roulette site
Start with the wheels on offer. A site that lists European and French tables at a range of stakes is doing more for your money than one with a large lobby of American tables and a branded game show. If American roulette is the only option at your stake level, that stake level is expensive.
Then the limits. Table minimums and maximums decide how long a given budget lasts and whether the bets you want to place are available at all. Look at both inside and outside maximums, since they are usually set separately, and check whether a table lets you place the full spread you intend before you sit.
Speed is the quietly important one. The house edge is a percentage of turnover, so the cost of an hour is the edge multiplied by your stake multiplied by the number of spins you play. Fast automatic wheels deal far more spins per hour than a live dealer table with a human croupier, and rapid formats faster still. Same 2.7%, considerably more turnover, so considerably more spent per hour. If you want the evening to last, a slower table does more for you than any bet selection.

Are hot and cold numbers worth betting on?
No. The wheel has no memory, so previous results carry no information about the next spin. A number that has appeared five times in an hour and one that has not appeared at all have exactly the same chance on the next spin, and both pay the same 35 to 1 against a 1 in 37 probability on a European wheel.
